A number of farmers in the Caranavi region of Bolivia bring their harvest to the Buena Vista Mill

Coffee cherries go through a huge process before they come to us to be roasted, when picked coffee cherry looks ripe and red like you see here. It then goes through a process of pulping, washing and drying (with some more steps before, after and in between).

Once pulped it is common for the leftover pulp to be broken down and used as fertilizer. BUT there is another option, that is not only a great way to reduce production waste but to also create an additional revenue stream for growers. In this method the leftover cherry is dried after pulping and brewed as a delicious tea.

We find it to have a delicious sweetness that reminds us of fairy floss, a ich toffee flavour and dried stonefruit.
