Red Honey Process
The cherries are pulped by pressure against a centrifuge, by controlling the pressure the harder / underripe or overdried cherries are not pulped and then they are separated.
With all of the mucilage still on the beans they are taken to the drying patio / raised beds were they are left undisturbed (and sometimes covered in plastic) for 24 hours.
The beans are then stirred each day from 8am-2pm. In order to maintain the heat and control the humidity the beans are covered in plastic from 2pm. Depending on weather conditions this process will take between 9-12 days.
