Finca Himalaya is Mauricio Salaverria’s second farm, where he uses an interesting natural processing method dubbed “Supersonic.” This involves laying the cherries in a thick 30cm layer for 3 days, then followed by a thin single layer for the remainder of the drying time (Until Moisture has reached 16%). Following this the coffee is put into a dark room for about 1 week for sugars to stabilise before being milled. The care Mauricio takes on all steps of production is very impressive.
